Vanilla Meltaway Cookies

Ever feel like eating something sweet and delicious – but simple?

Sometimes I feel like my taste buds are SO over-stimulated. 

Like when I happen to go to a salad bar…

It can happen!

And I am like “mm spinach… mm grilled vegetables… quinoa salad…edamame… apples… cheese… avocado… chicken…dried cranberries… croutons…goldfish…dressing…” And then I am like – what is this pile of individually healthy foods that are now no longer healthy because they have become one large pile of slop??

Sure, 3-4 of those items may have tasted delicious together – may even 4-5… but all together there’s always just too much happening!

Oh, and my salad always ends up somehow weighing like two full pounds.

What’s that about?

Vanilla Meltaway Cookies

Prep Time: 45 minutes | Cook Time: 15 minutes | Total Time: 1 hour 15 minutes

Ingredients

1 cup unsalted butter, softened

1/3 cup powdered sugar

4 teaspoons vanilla extract

2 cups all purpose flour

1/4 teaspoon salt

Additional powdered sugar for rolling

Directions

  1. In a medium bowl, beat butter and sugar until creamy. Add vanilla, beat to combine.
  2. Add flour and salt, folding ingredients until dough forms into a ball.
  3. Refrigerate dough for around 30 minutes.
  4. Preheat oven to 350F. Lightly grease a cookie sheet, set aside.
  5. Use a small spoon to scoop and roll cookie dough into 1-inch balls, set on cookie sheet about 1-inch apart.
  6. Bake at 350F for 15-16 minutes.
  7. Remove from oven and allow to cool on pan about 5 minutes.
  8. In a small bowl, pour additional powdered sugar for rolling – dip and roll cookies in powdered sugar one at a time, then set cookies onto a wire rack to cool completely.

Storage: Store cookies in an airtight container for 3-4 days or refrigerate for up to 1 week.
