S’mrownies (S’more Brownies)

Yes, I am STILL planning my wedding – and I am STILL hungry!

Duh – like I ever won’t be hungry – what a curse! Or a blessing? 

I apologize for my lack of posts the past few months, ever since our move to Columbus – it seems like we have been busy busy busy! 

Between work, travelling and just getting settled in a new city – it seems like there is no time!

Last week we went on an amazing road trip with our good friends Mike and Ginny. We spend time in Charleston, SC – Tampa, FL – Vero Beach, FL – Savannah, GA – Atlanta, GA… I think I ate enough food for a whole month… in a week! Woops!

Anyway, all this travelling the southern states made me SO excited for summer!

The warm weather, being outside, the delicious food…

Crap – back to food again.

Anyway – I know it is not summer yet. In fact, it’s barely spring – but a girl can dream right?

So why not make a variation on the ULTIMATE, most CLASSIC summer treat??

S’mrownies (S’more Brownies)

Now THAT is what I call a S’mrownie – well I guess if we are getting technical, its more like a S’More Brownie/Muffin cup… but let’s be real – S’mrownie sounds WAY cooler!!

First, a buttery layer of graham cracker crust. Smrownies3

Then, a thick layer of marshmallows, layered with rich brownie batter – then baked to perfection. Smrownies10

Then covered with even MORE mini marshmallows, chocolate chips – and finally – a graham cracker garnish. Now that’s what I call ooey gooey good!

Ingredients

1/2 cup (1 stick) butter, melted

1 1/2 cups graham cracker crumbs

1/2 cup brown sugar, packed

1 batch brownie batter, boxed is fine (prepared as directed)

3 cups mini marshmallows

1 1/2 cups semi-sweet chocolate chips

5 honey graham crackers (where 1 graham cracker breaks into 4 smaller pieces)

Directions

  1. Preheat oven to 350F – lightly grease muffin pan, set aside.
  2. In a small, microwave-safe bowl heat butter until fully melted. Add brown sugar and stir until fully combined. Add graham cracker crumbs, stirring until all crumbs are moistened.
  3. Using a large spoon, drop even amounts of graham cracker into each muffin cup. Use clean fingers to press crumbs down firmly into pan.
  4. Bake at 350F for approximately 5 minutes.
  5. While crust is in oven, make brownie batter (following boxed, or your favorite recipe, instructions). Stir until all dry ingredients have been moistened.
  6. Remove crust from oven, drop a small handful of mini marshmallows (7-8) in each cup. Use a large spoon to add dollops of brownie batter over marshmallows.
  7. Bake at 350F for 15-18 minutes, or until a wooden toothpick comes out clean.
  8. Remove S’mrownies from oven – immediately adding remaining marshmallows and chocolate chips evenly over the cups. Allow to cool for 4-5 minutes (or alternatively, place S’mrownies back in oven for an additional 2-3 minutes, then allow to cool for 4-5 minutes). 
  9. After S’mrownies have partially cooled – break apart graham crackers and add one piece of graham to each S’mrownie. Allow to cool at least another 10-15 minutes (the hotter the s’mrownies when handling, the more likely you’ll get chocolate everywhere. If you don’t mind a chocolate-covered-everything – dig in whenever!). 
  10. Once S’mrownies have cooled – use a knife to help separate s’mrownie from muffin pan, then to remove from pan altogether. Try as best you can not to press against warm chocolate so that chips keep their form. 
  11. Serve warm (or a room temp) with a tall glass of milk and plenty of napkins! S’mrownies can be just as messy as S’mores!

Storage: Store in airtight container for 3-4 days.
