Oreo Stuffed Holiday Cookie Squares

It’s almost Thanksgiving!! It’s almost Thanksgiving!!

Or as I like to call it – Turkey Day!

Thanksgiving is my MOST FAVORITE holiday!

Why, you ask?

Food and family. 

Simple as that.

It’s the only holiday where you are literally doing it wrong if you don’t feel sick by the end of the night. 

Thanksgiving also marks the start of the “Holiday Season” – in other words, Christmas songs WILL start playing on the radio first thing on Friday (after Turkey Day).

In the holiday spirit, I figured – why not throw a little something delicious together?

Oreo Stuffed Holiday Cookie Squares

Prep Time: 20 minutes | Cook Time: 20 minutes | Total Time: 1 hour 20 minutes

Layers of Oreo, sandwiched between chocolate and M&M cookie dough – baked to ooey gooey perfection.  C-OHB1 These Oreo stuffed holiday cookie squares are pretty stellar, if I do say so myself.  C-OHB5 And they look AWESOME! I mean, come on! Look at them! C-OHB7 Enjoy one! Or two! Or fifteen! C-OHB2 They are easy to make and perfect for sharing with your friends and family this holiday season. C-OHB6

Ingredients

1 cup butter or shortening

3/4 cup light brown sugar, packed

3/4 cup granulated sugar

2 eggs

2 teaspoons vanilla extract

2 1/4 cups flour

1 teaspoon baking soda

3/4 teaspoon salt

1 cup, plus 1/4 cup, M&M baking bits

2/3 cup semi-sweet chocolate chips

16-25 chocolate cookie sandwiches (I used Oreo cookies – 16 for a single cookie layer, 25 for two cookie layers)

Directions

  1. Preheat oven to 375F. Lightly grease a square 8×8 pyrex pan, set aside. 
  2. In a medium bowl, cream butter (or shortening) with sugars. Add eggs and vanilla, stirring until fully incorporated. 
  3. In a small bowl, combine flour, baking soda and salt – mix to combine.
  4. Add dry ingredients to wet, folding continuously until smooth ball of dough forms.
  5. Add 1 cup of  M&M baking bits and chocolate chips, stirring until evenly distributed throughout dough.
  6. Scoop about half of dough into prepared baking pan – spreading and pressing evenly to cover entire bottom of pan. 
  7. Place 16 Oreo cookies side by side over first cookie dough layer (4 rows of 4 should fit). If choosing to add a second layer, add remaining Oreo cookies whole or crumbled on top of previously added cookie layer.
  8. One small scoop at a time, press cookie dough (slowly and lightly) over Oreo cookie layer. Pressing too hard could break the cookies, and moving too quickly could move Oreo cookies around. 
  9. Once an entire top layer of cookie dough has been pressed, sprinkle with remaining M&M baking bits.
  10. Bake at 375F for 20-22 minutes, or until squares begin to lightly brown at edges. Remove from oven and allow to cool for 35-45 minutes. 
  11. Slice squares and serve with a cold glass of milk. Happy holidays!

Storage: For best taste, store in an airtight container for up to one week. Freeze for 2-3 weeks.
