Chocolate Chocolate-Chip Muffins

Duh – everyone knows that.

You should be having a meal with protein and nutrition that will sustain you throughout the morning – and set a healthy eating tone for the of the rest of the day!

So for all you people out there – seeking your next best, healthy breakfast recipe…

This is NOT it! 

Sorry guys.

I’m all for healthy foods.

But let’s be real – neither of us really WANT to eat a healthy breakfast, we want the good stuff.

Chocolate Chocolate-Chip Muffins

Prep Time: 10 minutes | Cook Time: 15 minutes | Total Time: 35 minutes | Yield: 20 muffins

Ingredients

1 cup granulated sugar

1/4 cup brown sugar, packed

2 eggs

1 tablespoon vanilla

1/2 cup canola oil

3/4 cup milk

2/3 cup unsweetened cocoa powder

2 cups all-purpose flour

1/2 teaspoon baking soda

2 tablespoons baking powder

3/4 teaspoon salt

1 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350F. Lightly grease muffin pan, set aside.
  2. In a medium bowl, combine granulated sugar, brown sugar, eggs, vanilla, oil, and milk. Whisk until thoroughly combined.
  3. In a small bowl, combine cocoa powder, flour, baking soda, baking powder, and salt. Slowly add dry ingredients to wet, folding together until all ingredients have been moistened. Add chocolate chips. 
  4. Using a small measuring cup (1/4 or 1/3 cup), scoop batter into muffin pan until each muffin is about 2/3 full.
  5. Bake at 350F for 15-18 minutes (or until an inserted wooden toothpick comes out clean). Remove from oven and allow muffins to cool in pan for 5-10 minutes.
  6. Move muffins to wire rack to cool completely.

Storage: Cover with aluminum foil or plastic wrap for 2-3 days. Or store in refrigerator (covered in aluminum foil or plastic wrap) for up to 1 week. Freeze for up to 2 weeks (when wrapped in plastic wrap and stored in plastic zip-top bag).
