Birthday Cake Cookies

So it was my birthday! Yes, yes! Happy birthday to me!

I had a pretty great birthday – I got to celebrate with Jake and friends in Columbus, which was lovely!

And then, I got to fly home and visit the family! Which was amazing!

But you know what was really so great about my birthday this year?

I got 3 different birthday cakes…

Oh. Yeah. That’s right – THREE BIRTHDAY CAKES!

First, rich decadent chocolate layer cake.

Second, sweet vanilla sheet cake.

Third, COSTCO vanilla sheet cake.

So I guess the second and third were TECHNICALLY the same type of cake – but they were STILL two different cakes! And one was from Costco, so like – that totally makes it different. 

In conclusion, my birthday was great – but now a month has passed, and I’m like – uhh excuse me, I’d like some more cake please?

Birthday Cake Cookies

And they are adorable! Look at them! FullSizeRender (6) Not to mention, you could totally customize flavors and colors to celebrate any festive holiday! FullSizeRender (5) Black and orange for Halloween, green and white for St. Patrick’s Day, pink and red for Valentine’s day – the list goes on!

Ingredients

2 cups of funfetti cake mix (or try your favorite cake flavor!)

1 egg, beaten

1 teaspoon vanilla extract

3 tablespoons canola (or vegetable) oil

Sprinkles or sugar crystals for sprinkling (I used pink, red, yellow, blue and green)

Wax or parchment paper

Directions

  1. In a medium mixing bowl, combine cake mix, egg, vanilla, and oil – fold together ingredients until all are fully moistened.
  2. Clear surface and lay out a large sheet of wax or parchment paper. Scoop dough onto parchment paper, then use clean hands to form dough into one long log. The dough will be sticky! Wrap wax/parchment paper around log of dough, then place in freezer for approximately 30 minutes.
  3. Preheat oven to 350F – lightly grease a large cookie sheet, set aside.
  4. On a clear surface, set out a second large piece of wax/parchment paper. Place a heavy object on each corner of wax paper so it does not roll back up! Sprinkle desired sprinkle/sugar crystal colors in large rectangle onto paper.
  5. Remove log of dough from freezer, unwrapping completely. Set log of dough on top of sprinkle and roll – continue sprinkling sprinkles/sugar crystals until log of dough is fully coated. Once fully “sprinkled”,re-roll log of dough in parchment paper. Return to freezer for another 10-15 minutes.
  6. Once chilled – removed log of dough from freezer, unwrapping log of dough completely. Transfer log to a cutting board. With a sharp knife, slice dough into 1/2-inch cookie circles – pressing cookies flat with clean fingers before placing on greased cookie sheet. 
  7. Once cookie sheet is full, place in oven and bake at 350F for 7-8 minutes- or until cookies no longer appear “moist.”
  8. Remove cookie sheet from oven, allowing cookies to cool on pan for 1-2 minutes – then use cookie spatula to move cookies to a wire rack. Allowing them to cool fully here

Storage: Store cookies in an airtight container for 5-6 days, or freeze for up to 2 weeks.
