Best Ever Chocolate Chip Cookies

Hello everyone!!

I am so sorry that it has been so long since my last post – but I was casually relocating across the country!

The great news is that Jake and I are finally settled in our new HOUSE – crazy, right? Here in Columbus – I can afford to rent a house. It is wonderful!

Gatsby even has his own little backyard! YAY!

He is a happy doggy. And so I am a happy girl!

Until now, I really haven’t had the time, nor means, to bake! But have no fear – that time has passed!

I will admit – the entire process has been just a TAD stressful.

You know. Moving out of your old place. Driving across country. Moving into your new place. Trying not to pull your own hair out.

Or develop pure hatred for anyone else who has the time to “relax” and “lay around” – as you are loading boxes and moving furniture.

So I figure, what tastes best when I am stressed?

Best Ever Chocolate Chip Cookies

Prep Time: 15 minutes | Cook Time: 10-12 minutes | Total Time: 30 minutes

And that’s when I realized…

I know you have had the feeling too.  So that is why today – we are eating the BEST EVER Chocolate Chip Cookies.  FullSizeRender (12) These cookies are ooey gooey warm deliciousness! I have always loved this recipe – warm, cold, with milk, or ice cream, plain, with extra chocolate – no matter what, you know they are gonna taste REAL good. 

 

Ingredients

3/4 cup butter-flavored shortening (or unsalted butter – 1 1/2 sticks), at room temperature

3/4 cup granulated sugar

3/4 cup light brown sugar, packed

2 eggs

1 tablespoon vanilla

2 1/4 cups all-purpose flour

1 teaspoon baking soda

3/4 teaspoon salt

1 3/4 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350F. Lightly grease two cookie sheets, set aside.
  2. In a large bowl, cream butter and sugars together until fully combined. Add eggs, one at a time, then vanilla – stir until fully combined. 
  3. In a small bowl, combine flour, baking soda and salt – stir.
  4. Fold dry ingredients into wet until all ingredients have been moistened and appear dough-like (you shouldn’t see any more flour hanging out in the bowl!). Add chocolate chips – stirring until chocolate chips are distributed evenly throughout dough.
  5. With a large spoon and clean hands – roll dough into 1-2 inch balls. Set balls onto cookie sheet, about 2 inches apart from one another. 
  6. Bake at 350F for 10 minutes. Remove from oven and allow to cool on pan for around 2 minutes. Move cookies to wire rack and allow to cool completely here. Or – eat them while they are still fresh from the oven! Warning: they might melt in your hands! But they sure will taste good!

Storage: Store in an airtight container for up to 1 week – freeze for 2-3 weeks.
